Salmon and Cauliflower Pasta Bake
⏱ 20 min prep · 🍳 30 min · 🍽 4
Cauliflower cooked until soft and folded into a white sauce with macaroni turns mild and faintly sweet — just enough to melt into the pasta instead of standing out as a separate vegetable on the plate. Salmon goes in chunks on top right at the end and finishes cooking in the oven's residual heat while the cheese turns golden, so there's no separate pan to watch during the pre-dinner scramble.
It's one baking dish and one oven: about 20 minutes to put together, 30 minutes baking. The sauce binds everything — vegetable, pasta, and fish — so it's all ready together when the timer goes.
Serve it straight from the dish with crusty bread or a simple side salad. Leftovers keep well in the fridge and reheat the next day without the salmon drying out.
Ingredients
- 2.000 blomkålhoder
- 600.000 g laks (fersk)
- 200.000 g pasta
- ost (hvitost)
- 30.000 ml smør
- 30.000 ml mel
- 600.000 ml melk
- 10.000 ml dijonsennep
- 0.500 sitron
- muskatnøtt
- krydder (diverse)
- paprika
Instructions
Strø revet ost over.
Gratiner i ovnen i 5–10 minutter til osten er gyllenbrun og laksen er gjennomstekt. Server umiddelbart.
This is the dish that turns up in our kitchen the week after a big shop, when there's a stray head of cauliflower going soft in the crisper drawer and nobody's keen on it steamed plain again. Our daughter has never clocked what's actually in the bake — to her it's just "creamy fish pasta," and the sauce keeps every vegetable bit out of sight. On Fridays when the fish counter's picked over, we swap in tinned salmon or smoked mackerel instead of fillet, and whatever's left from Sunday dinner goes straight into a lunchbox cold on Monday, no reheating needed before the school run.
FAQ
Can I assemble the bake the night before?
Yes, put the dish together the evening before and keep it covered in the fridge until you're ready to bake. Pull it out while the oven preheats, and add 10-15 minutes to the bake time since it's starting cold. Hold off on the cheese until just before it goes in, or the top won't brown as evenly.
Does frozen cauliflower work as well as fresh?
Frozen cauliflower works fine — just cut a couple of minutes off the boiling time since it's already softer than fresh. Let it steam-dry on a tray for a few minutes after draining, because frozen florets release more water and can thin the sauce out more than you'd like. Fresh cauliflower gives the most consistent result, but it's not worth stressing over on a weeknight.
What can I use instead of salmon?
Smoked mackerel or ready-cooked cod both work well when salmon fillets are pricey or the fish counter's bare. Flake the fish over the bake right before it goes in the oven, and go easier on the salt if you're using smoked mackerel, since it's saltier on its own than salmon. Shrimp works too, but add it right at the end so it doesn't turn rubbery.
How do I make the bake more kid-friendly?
Chop the cauliflower smaller, or blitz half of it into the sauce so the texture is less noticeable for younger eaters. It also helps to set aside a small bowl of plain pasta and sauce before mixing in the fish and cauliflower, so picky eaters can add back only what they're willing to try. Go light on the nutmeg, or skip it altogether, if you're serving toddlers under three.
How long do leftovers keep, and can I freeze the bake?
Stored in a sealed container in the fridge, the bake keeps for 2-3 days — reheat with a splash of extra milk in the microwave or oven so the sauce doesn't dry out. It also freezes well in individual portions for up to two months, though the cauliflower softens further after thawing — fine for a weeknight, less photogenic for guests. Kids will happily eat it cold from the fridge the next day if the morning's too rushed for reheating.
Can I use a different pasta shape instead of macaroni?
Penne or fusilli both work just as well, coating just as evenly with the cauliflower and sauce as macaroni does. Stick to a short pasta shape — long strands like spaghetti are hard to distribute evenly through the dish. Cook the pasta a couple of minutes under the packet time, since it keeps absorbing sauce while the bake is in the oven.
